BTU per square inch, not total BTU
Total BTU measures how much fuel a burner can burn per hour — it says nothing about how hot your food gets. The honest spec is BTU per square inch of primary cooking area ("heat flux"): divide total BTU by primary cooking-surface square inches, excluding warming racks. A meaningful band for real cooking heat is roughly 80–100 BTU per square inch. A grill with a big total-BTU number and a bigger cooking area can have a lower heat flux than a smaller, lower-BTU grill — the classic marketing trick. Grate material tradeoffs
Cast iron (bare or porcelain-coated) holds and radiates the most heat for the deepest sear marks, but rusts fast if the seasoning or coating is scratched. Stainless steel resists rust best and needs the least maintenance, but holds noticeably less heat. Porcelain-coated steel is the budget default — decent while the coating holds, but it chips and rusts at exposed spots. See Cast Iron vs Stainless Grates.
Gas vs charcoal vs pellet
Gas ignites instantly and holds a precise, dial-controlled temperature (~350–550°F searing range) with minimal smoke-flavor compounds. Charcoal and wood produce genuine smoke-ring and bark flavor through incomplete combustion and dripping-fat vaporization (~250–700°F+ depending on airflow), at the cost of manual temperature control. Pellet grills auto-feed wood pellets in on/off cycles (~160–500°F typical), giving milder wood flavor and app-based convenience, with a real ±15–20°F swing around the set point rather than laser precision. Smoker temperature zones
225°F, 250°F, and 275°F are the three conventional low-and-slow targets. 225°F is the traditional purist floor (most smoke penetration, longest cook); 250°F is the common practical middle ground; 275°F cooks faster and is easier for some offset smokers to hold steadily without excess white smoke. Grill sizing
Size by primary cooking area in square inches, not the total-including-warming-rack number on the box. Rough rule of thumb: a 6-inch burger patty needs about 30–35 sq in of grate space to flip without crowding, so a 450 sq in primary grate fits roughly 12–14 burgers at once. Thermometer truth
A grill's built-in lid thermometer measures air near the dome, several inches above the grate — that reading commonly runs 25–50°F off true grate-level temperature, and more on windy days or with frequent lid-opening. An independent grate-level probe (wired or wireless) is the honest fix. More in Why Lid Thermometers Lie.
Propane vs natural gas
Propane and natural-gas grills are not interchangeable without a conversion — the orifices, regulator, and sometimes valves differ because the two fuels burn at different pressures and BTU-per-cubic-foot. How long grills last
Grill lifespan is mostly a rust-and-burner story: budget porcelain-steel gas grills commonly last 5–8 years before burner or grate rust-through, mid-tier stainless/cast-iron builds often reach 10–15 years with basic maintenance (covering, periodic burner-tube cleaning), and simple charcoal kettles with no burners can outlast both if the bowl doesn't rust through.
